Last week, the Jezeršek Culinary House reopened its doors, giving young people a genuine insight into the world of hospitality and showing how beautiful, diverse and creative this profession can be. Over the weekend, the Jezeršek Culinary House, in cooperation with partners Bahrain Victorious and Ljubljana Tourism, hosted aspiring final year students and students from catering and tourism schools for the second year in a row.

Entrepreneurial lemonade

On Tuesday, November 18, 2025, the Jezeršek Culinary House hosted special guests – fourth-graders from the Sora Branch Primary School, who were given a very special entrepreneurial experience. In cooperation with the Slovenian Entrepreneurs’ Club (SBC), Jezeršek Gostinstvo, as part of the Festival of Entrepreneurship and Events, which takes place under the name Entrepreneurship Up Close, prepared an interesting educational program in which students first learned about the possibilities of starting a business, the basic laws of entrepreneurship and the importance of taxes in a child-friendly way, and then, divided into three groups, they faced the challenge: preparing their own “entrepreneurial” version of lemonade.

With the help of the Director of Jezeršek catering, Martin Jezeršek, each group first developed its business idea, and then divided the responsibilities for finance, development, marketing and sales among the students. With some initial capital, they entered the store, selected the desired raw materials and set to work with great enthusiasm. The results showed that each group was extremely successful in their work.

By actively engaging in such tasks, they want to show young people that the entrepreneurial profession carries a noble mission – creating useful services and products, caring for jobs and contributing to the development of the local environment.

The eventful events continued at the end of last week when the Jezeršek House of Culinary Arts was visited by final year students and students of hospitality and tourism schools. The young people took a peek behind the scenes of the hospitality profession and learned what it takes to work in one of the most dynamic industries.

“We want to inspire young people to pursue a profession that offers exceptional opportunities – at home and abroad. We have many major projects ahead of us, including participation in the Slovenian House at the Winter Olympics, where the knowledge and energy of young people will be of key importance. We are pleased to be able to show future generations how far dedication to hospitality can take them,” explains Martin Jezeršek, director of Jezeršek Hospitality.

“At Ljubljana Tourism, we support such projects that allow young people to come into contact with diverse practices and gain insight into the exciting behind-the-scenes of the hospitality professions during their education. We believe that young people are the ones who will co-create the future of tourism with their creativity, fresh ideas and dedication,” said Ljubljana Tourism.

Sustainable business: smart technology and laundry renovation

Jezeršek gostinstvo has been striving for sustainable business for many years, including in the area of reducing food waste. One of the major measures was the introduction of smart scales, which allows for an accurate and real-time overview of the amount of food waste. Based on the data collected, the company regularly optimizes standards, adjusts menus, and thus actively reduces the amount of food waste and its environmental footprint.

A major step forward in the field of sustainability is also the thorough renovation of the laundry, in which the company Jezeršek gostinstvo has invested heavily in the last two years. The modernization included both the renovation of the space and the entire washing technology, which allows for lower water and electricity consumption and significantly more efficient processes.

From meat to top-level sport

The walk through the Jezeršek House of Culinary Arts was enriched by interactive stations, including the station of Luka Jezeršek and Matej Stipanič. They presented individual cuts of beef to the young people, and they also placed special emphasis on the techniques of correct cutting of vegetables and the use of professional terminology, which is key to precise and safe work in a professional kitchen.

The visitors had the exclusive opportunity to enter the mobile kitchen of the top cycling team, Bahrain Victorious, where driver David Kren explained the logistics of setting up and managing the mobile kitchen. Meanwhile, the team’s nutritionist Giacomo Tomio presented how important it is to plan a proper and high-quality diet for top athletes. He revealed that cyclists consume up to 8,000 calories a day during the most demanding races, so their meals must be extremely nutritionally balanced and thoughtfully planned. Chef Igor Bigović invited the young people to a professional kitchen on wheels, shared many interesting facts with them, and showed them how meals are prepared for one of the busiest and most physically demanding sports teams in the world.

The event offered young people a comprehensive insight into the world of catering and large-scale event catering.
