Laissez-Faire Catering, AV1, and Simply Seated have unified to launch a collaborative delivery model for large-scale incentive programs, following the success of a five-day, multi-venue Sydney experience for 500 international guests.

The collective was shaped through the delivery of the program itself – an ambitious, highly curated journey designed to showcase Sydney through a series of completely distinct, immersive experiences.

When global incentive planner Carol Ann Payne-Johnson, President of The Travel Corner, Inc., was tasked with delivering the program for Premier Financial Alliance, the vision was clear: to create something extraordinary – an incentive that would not only reward top performers, but immerse them in the very best of Sydney, from its iconic harbour to its venues, produce and culture.

Laissez-Faire Catering’s David Quinn, Head of Sales, connected the client with trusted partners AV1 and Simply Seated – establishing a team approach from the outset that extended from concept development, venue engagement, experience design and delivery.

Sara Flaksbard, General Manager of Laissez-Faire Catering, said early alignment between partners – and with venues – was critical to the program’s success.

“This wasn’t about delivering events in isolation. It was about working closely with each venue to unlock what was possible within each space, then designing experiences that pushed those boundaries. By joining forces from the beginning, we were able to bring the client’s vision to life in a much more cohesive and impactful way.”

The program took guests on a curated journey across Sydney, from a grand welcome at Sydney Town Hall to a progressive dining experience at Watersedge, a full-scale takeover of Luna Park Sydney, an exclusive after-hours experience at David Jones, and a dramatic finale at Carriageworks.

At Watersedge, one of the program’s most complex environments, the team delivered a full venue transformation – creating multiple immersive spaces including a noodle market, neon disco, harbour bar and speakeasy lounge. The experience required precise coordination across catering, styling and production to ensure seamless guest movement and consistent delivery across each environment.

Nigel Mintern, Managing Director, AV1, said the integrated approach allowed the team to push creative and technical boundaries. “When production, styling and catering are aligned from day one, it allows you to think differently about how a space can be used. That’s where the most impactful experiences are created.”

Belinda Porra, Founder, Simply Seated, added that the collaboration enabled a deeper level of transformation across every venue. “Each environment was designed to feel completely different. We were layering styling, furniture and spatial design to create experiences that felt immersive and considered from the moment guests arrived. The venues were transformed beyond themselves, resulting in guests experiencing the spaces like no one has before and likely won’t again, given the bespoke nature of the collective design.”

The result was a seamless, multi-day journey where each experience felt distinct, yet connected through a consistent level of quality, creativity and attention to detail.
For the client, the collaborative model was key to delivering the program at scale.
