The best restaurants for me are the ones that immediately attune to the dynamic of the guests and deliver a hospitality experience where the guest is front and centre, not the food, the service or the restaurant itself. This is easier said than done, particularly for restaurant owners and chefs who have Michelin star aspirations or those who prefer food to people!

1. Majerija, an agritourism farm and restaurant in the Vipava valley in Slovenia is my first choice after one of the simplest and best meals I’ve ever had with astonishingly good wine, all prepared and served by owners Matej and Nataša Tomažič.

2. Vancouver has many great restaurants but local #eventprof Tahira Endean suggested Forage as an example of what’s happening gastronomically in Vancouver. Located in the city’s west end, Forage represents Chef Chris Whittaker’s vision around building and supporting local communities and farm to table sustainable dining.

3. Forest Avenue in Dublin has settled into one of the city’s best and most consistent restaurants serving amazing fusion-style food that’s prepared before your eyes by chef John Wyer and his team.
