A testament to the expertise of ICC Sydney’s Food and Beverage Manager and Sommelier, William Wilson, the award was presented by the NSW Wine Industry Association and Destination NSW. The awards were judged by Dane Richards, editor of News for the Food Lover and President NSW Bailliage of Chaîne des Rôtisseurs, and writer and editor Dom Sweeny.

The 2025 Best NSW Wine List in a Caterer or Functions Venue accolade underscores ICC Sydney’s unwavering commitment and expertise in supporting the NSW wine industry. The venue proudly serves 100% local NSW wines to millions of event attendees each year. Since opening in December 2016, the venue has facilitated the distribution of more than 400,000 bottles of local wine at events.
William Wilson has been instrumental in curating the venue’s 100% NSW wine list, alongside ICC Sydney General Manager – Operations, Lynell Peck. Wilson’s industry connections and knowledge of local wines have played a key role in the venue’s contribution to regional suppliers.
William Wilson was among Australia’s first certified sommeliers through the Court of Master Sommeliers and is a Certified Cicerone®, equivalent to the Sommelier qualification in the world of beer. This is the sixth time that ICC Sydney has been a finalist at these prestigious awards, and the fourth time it has won in its category. The NSW Sommelier’s Wine List Awards were announced at a gala function held at NSW Parliament House on 27 May 2025.
