The interior of the Jadran Heritage Hotel will blend original architecture with modern design and artistic details, highlighting the individual character of the elegant boutique property. Each of the 12 exclusive designer rooms and suites will be named after a landmark or historical figure from the city’s past. The design is signed by Tissa, a Poreč-based architectural studio with which Valamar has successfully collaborated for many years.
JAZ by Ana Roš debuts in Croatia
One of the key elements of the Jadran Heritage Hotel is the gourmet experience offered to every guest. As part of the hotel, JAZ by Ana Roš will open its doors — a bistro led by one of the most influential chefs in the world, Slovenian chef Ana Roš. Her distinctive young dining concept, based on seasonal and local ingredients and the fusion of global influences with Istrian authenticity, positions the Jadran Heritage Hotel and Poreč at the very top of the regional gastronomic scene.

“The historic centre of Poreč is undergoing the largest renovation cycle in its modern history, and the restoration of the Jadran Hotel represents, for us, not only an investment in tourism but also the valorisation of existing cultural heritage by giving it a new, contemporary function that benefits the city, its residents, and the local economy. Moreover, we have preserved the protected and recognisable view of our waterfront, and this project will further contribute to revitalising the old town, developing year-round tourism, and strengthening the gastronomic offering,” said the Mayor of Poreč, Loris Peršurić.
In recent years, Valamar has made significant investments in developing Poreč as a premium gourmet destination through a series of collaborations with leading names from the global and regional culinary scene. This began with the arrival of Miramare by Fratelli Cerea on the island of Sveti Nikola in 2023, whose Da Vittorio restaurant has held three Michelin stars for many years.

An important role is also played by the Spinnaker Gourmet Stage. This multiple-award-winning concept has hosted numerous highly esteemed international and local chefs over the years, further strengthening Poreč’s reputation as a place where top-tier cuisine meets an authentic Mediterranean experience.
The opening of Pical Resort, Valamar Collection, planned for spring 2026, will bring Poreč and Istria new collaborations with Michelin-starred chefs and an ambitious gourmet platform that connects the Croatian, Slovenian, and Italian culinary scenes.
