This year, Zátiší Group celebrates 35 years since its founding. Over the past three and a half decades, it has become the longest-operating hospitality group in the Czech Republic and one of the defining forces in the country’s fine-dining scene.
From the opening of the legendary V Zátiší restaurant in 1991 to its emergence as a respected player on the European catering stage, the group has continually evolved while staying true to its core mission: creating memorable dining experiences. To mark the milestone, Zátiší Group is celebrating the way it knows best – through food. Special anniversary menus featuring some of the most beloved dishes from its history will be served across its restaurants, while preparations are underway for its most ambitious project yet: Bursa, a modern Czech pub set to open in Prague’s Holešovice Market.
We started with a simple vision: to bring to Prague the quality of food and hospitality we had experienced elsewhere in the world.
The Zátiší story began shortly after the Velvet Revolution, when founder and owner Sanjiv Suri opened Café Museum, followed by the wine bar and restaurant V Zátiší on Prague’s Liliová Street. “We started with a simple vision: to bring to Prague the quality of food and hospitality we had experienced elsewhere in the world,” recalls Suri. “Back then, a cup of coffee cost CZK 4.20, and our most expensive sandwich was less than six crowns.” Over the years, the company expanded beyond its flagship restaurant, adding acclaimed venues such as Mlýnec and Bellevue, building Zátiší Catering into one of the region’s leading event catering businesses serving clients across Europe, and developing Fresh & Tasty, a division focused on corporate and school dining.

Bringing back the dishes guests love
The anniversary celebrations naturally extend to the restaurants themselves. At V Zátiší, which underwent a major transformation last year, guests can enjoy a special tasting menu centred on signature dishes in their modern interpretations. At Mlýnec, Executive Chef Láďa Vaníček has curated a selection of guest favourites.
A new chapter: making great food more accessible
While the past 35 years have largely focused on shaping fine dining in the Czech Republic, the next chapter is about bringing exceptional food experiences to a broader audience. Zátiší Group will enter the casual dining segment with Bursa, a contemporary interpretation of the traditional Czech pub located in Prague’s Holešovice Market. The venue will accommodate up to 300 guests and feature open-fire cooking, its own bakery, dry-aged meats, and tank beer. The concept draws inspiration from both the market’s history and the spirit of Prague’s modernist movement of the 1920s.

Sustainability and innovation for the future
Sustainability remains a key focus across the group’s operations. Zátiší Group continues to invest in reducing the carbon footprint of its catering activities, supporting local suppliers, and developing more responsible approaches to hospitality. “Our goal for the next 35 years is to continue creating the ‘WOW moments’ that have always been part of our DNA,” says Suri. “But we want to do so with an even greater commitment to the planet and the communities around us.” As it enters its next chapter, Zátiší Group remains rooted in strong foundations while continuing to redefine what modern hospitality can look like in the Czech Republic and beyond.
